It’s been forever since I had anything under Pretty Darn Fit “Make”. I’m going to be honest and say the food I prepare everyday is often a huge experiment and I fail to write down the ingredients and measurements when I hit the jackpot with my recipes.
So here’s one that’s really easy to do with ingredients you’ll often find in your fridge or kitchen. It’s very basic and if you’re feeling adventurous yourself, go ahead and add your own twist to it.

HERE GOES.
Yield: Two sandwiches
You’ll need:
- 2 medium blocks of firm tofu
- Focaccia Bread
- Kale/ Lettuce/Spinach
- Salt
- Pepper
- Garlic Powder (optional)
- 1 medium bulb White Onion
- Drizzle of Olive Oil
- 1/2 tsp Coconut sugar
For the BBQ Sauce
- 3 tbsp Soy Sauce or Liquid Aminos for a gluten-free alternative
- 1.5 tbsp Tomato Paste (not in your cupboard today? Use tomato sauce or catsup)
- 1 tsp Coconut Sugar
Procedure:
- Cut tofu into thin, 1-inch wide strips
- Coat in salt, pepper and garlic powder
- Cook on a non-stick pan in medium heat. Flip once they get a nice, brown and black (from the pepper) color and set aside once cooked.
- Slice onions into thin rings and saute in olive oil and 1/2 tsp of coconut sugar. If you have caramelized onions at your disposal, these will work way better.
MAKING THE BBQ SAUCE
In a bowl, mix all three ingredients until you get a dark reddish brown sauce. Add in the sugar for sweetness but if you don’t like your BBQ sauce sweet, then just skip this.
The measurements above will not always work the way I hope it would. This depends on the brands of soy sauce and tomato paste or sauce that you use and if you’re using Liquid Aminos. It’ll be mostly trial and error but it helps to know that the consistency of your sauce has to be just a little thinner than your regular tomato sauce. As for the taste, mine always ends up tasting just like the BBQ sauce that comes with McDonald’s Chicken Nuggets (ugh. I used to eat those!), which I’m learning to make a vegan version of, by the way. If it’s too sour (from the tomatoes), add a bit more soy sauce. If too thin and salty, add a tad more tomato paste or whatever you’re using. You get the drift.
ASSEMBLE IT!
The fun part. On one slice of focaccia, layer your greens and on the other, spread out your onions. Add a layer of tofu on top of your greens and top it with barbecue sauce. Now, don’t copy how I did the sauce in these photos. I was being conservative because otherwise, you wouldn’t be seeing the slices of tofu anymore. LOL
Add another layer of tofu and smother with barbecue sauce. Flip that other slice of focaccia over all of it and eat up!
