Dessert lovers, rejoice! Yes, that includes me. A new vegan-friendly joint has just opened in Quezon City.
Ikigai, a small and simple cafe found at the Pos Building at the corner of Tomas Morato and Scout Madrinan, offers flavoured shaved ice known as the Kakigori.
No, they’re not snow cones, although the concept sounds all too familiar. The dessert is said to have existed over a thousand years ago back when it was made out of natural ice produced during the coldest period of winter.
Known as a luxurious dessert affordable to only a few, Kakigori is made by scraping ice with a knife directly into a metal bowl and topped with sap and some golden syrup back in the day. It has continued to evolve ever since and now comes in flavors that are friendly to vegans (finally!).
At the moment, there are only two vegan flavors available in the cafe. Ikigai plans to expand their flavor offerings for vegans in the near future so don’t fret.
The cafe also makes their own ice cream! You can purchase them in scoops on a cone but they’re often served with the flavored, shaved ice as a topping.
Ikigai Kakigori Cafe is located at the Ground Floor of Pos Building, Scout Madrinan corner Tomas Morato.
